About Ratio
Ratio Cocoa Roasters is a bean to bar chocolate making company.
As chocolate makers we ethically source cocoa beans and then perform all the steps to make chocolate from the “bean” to the finished chocolate “bar” right here in our Brunswick factory & cafe.
Our passion is to create individually flavoured small batch hand-crafted chocolate products using traditional techniques and 100% natural ingredients. This means just like coffee and wine, depending on the cocoa’s origin you will taste a difference in the flavour. This comes down to a combination of the terroir, rainfall, altitude, fermentation & drying methods, skill of the farmer and chocolate maker.

Why does it matter?
Ethics
Sourcing directly from farms or co-operatives means we know where our beans have come from, and that the farmer has been paid a fair price well above the world market price. There are well documented issues with slavery and child labour in mass produced chocolate.
Minimal ingredients
We only use 2 (dark), 3 (white) or 4 (milk) natural ingredients to make our chocolate and buy Australian sugar and milk powder. We do not add any emulsifiers, vanilla, additives or preservatives that mask the natural cocoa flavour.
Allergen control
We start with raw ingredients and do not put anything but chocolate in our machines. There are separate grinders and tempering machines for milk and dark chocolates, so our dark chocolates are all vegan certified. All our plain chocolates are also free of soy, nuts and
gluten. We do however use nuts and gluten on the premises.
